The recipes used are dependent on seasonal growth (availability) of the produce used ... meaning that all sauces and dressings, fruits and starter dishes such as ricotto tortelloni and parmisan cheese products vary according to the period of your stay. Such dishes are accompanied by the famous ‘tigelle’ or ‘crescentine’ served with garlic lard and parmisan and various local meat cutsincluding modena ham – all this is followed by deserts made from historic local recipies.
